1kg green beans, topped
40g (1/4 cup) slivered almonds
1 tsp finely sliced orange rind
2 tbsp. fresh lemon & orange juice
1 tbsp. olive oil
Freshly ground black pepper
Salt to season
1. Heat the almonds in an Arcosteel frypan and cook, stirring, for 1 to 2 minutes or until lightly toasted. Remove from heat and transfer to a bowl.
2. Whisk together the orange rind, juice and oil in a small jug. Season with pepper.
3. Cook the beans in an Arcosteel casserole pot of salted boiling water for 1 to 2 minutes or until bright green and tender crisp. Drain well.
4. Transfer beans to a Dune serving platter. Drizzle with lemon dressing and sprinkle with the toasted almonds. Add salt to taste. Serve immediately.
